Santorini wine tastes like the place it comes from. Volcanic soil, salt-laden wind, almost no rainfall. The native Assyrtiko grape is trained low to the ground in a coiled basket called a kouloura, a technique used here for around 3,000 years to keep the grapes off the wind. The result is a dry, mineral, citrus-edged white that pairs naturally with grilled fish. The other star is Vinsanto, a sun-dried dessert wine aged for years in oak.
